We will be offering another miso just packed from the barrel this afternoon. RedHead. A nice light miso made from Red Koji spores. A soybean/Rice koji/sea salt blend. This miso was made last year, so it’s really mellowed into a full satisfying flavor especially good for soups, sauces, dressing, desserts, anywhere you would like to heighten the umami in your recipes without the feeling of being over salted. Over the next 2 months I will be packaging miso when I feel the flavor has develop to its peak. I’ll be selling jars for $5.00 to help move the product. As many of you know I will be retiring from Macro Mamas at the end of this year. This business is currently up for sale.
