As June turns to July, we celebrate the last of the strawberries and anticipate the first sour cherries; we say farewell to asparagus and hellooooo to summer squash and cucumbers! These past few cool, mild days have made for tender, flavorful greens and lush growth. With forecasts in the 90s for the next week, however, summer is in full swing. That means pond swimming, lakeside picnics, fireworks, and hot nights. It also means I might have a shot at growing some decent watermelons this year!
Energetically, it's hard work for us to cool down our bodies on these very hot days. To help you with that, we've included cooling summer flavors in this week's menu. The grilled cauliflower brings a little bitterness -- nourishing for the heart and small intestine, stimulating to digestion especially in the heat when we tend to feel sluggish and stagnant. Tarragon mellows the bitterness and brings a cooling aspect to this dish. A cucumber salad, with energizing umeboshi vinegar, provides cool freshness that can help us get through the day. These cucumbers came straight from Plowbreak Farm in Burdett; they truly couldn't get any fresher!
We give thanks this week to our farmers and providers: Remembrance, Plowbreak, Wild Apple, Muddy Fingers, and Of The Forest Farm. We are fortunate to live among such plentitude and bounty.
